Batak cuisine, a part of Indonesian culinary traditions, is characterized by andaliman spice, often called "Batak pepper." This rare pepper is hand-picked from the jungle and cannot be cultivated, relying on bird enzymes for germination. Andaliman pepper has a slight anesthetic effect similar to Szechuan pepper and offers an intense citrus flavor, enhancing the perception of food and stimulating saliva production.
